Pineapple and Mango Sautéed with Thyme and Rosemary with Vanilla Ice Cream and Mint Oil

Ingredients
Ingredients for 10 servings
- Vanilla ice cream as needed
- Thyme, rosemary, mint
- 6 Mangos
- 30 rolled waffles
- Olive oil
Method
  1. Cut the pineapple and mango into small dice; 
  2. Sauté with the thyme and rosemary; 
  3. With the remaining mango (1 to 1/2) make a thick coulis by liquefying it in the blender. 
Mint olive oil
  1. gently heat the oil; add the mint leaves and let cool; 
  2. mix in a centrifuge and strain. 
Presentation
  1. Take some flat or deep plates; 
  2. In a circle arrange the pineapple and mango, ice cream and waffles; 
  3. Add the mango juice and drizzle with the mint olive oil.
