Pineapple and Mango Sautéed with Thyme and Rosemary with Vanilla Ice Cream and Mint Oil Recipe

Ingredients for 10 servings
- 6 Pineapples
- Vanilla ice cream as needed
- Thyme, rosemary, mint
- 6 Mangos
- 30 rolled waffles
- Olive oil
Method
- Cut the pineapple and mango into small dice;
- Sauté with the thyme and rosemary;
- With the remaining mango (1 to 1/2) make a thick coulis by liquefying it in the blender.
- gently heat the oil; add the mint leaves and let cool;
- mix in a centrifuge and strain.
- Take some flat or deep plates;
- In a circle arrange the pineapple and mango, ice cream and waffles;
- Add the mango juice and drizzle with the mint olive oil.
