Poached John Dory with Lemon Dill Mayonnaise Recipe

Ingredients
For 6 servings
- 4 John Dory
Mayonnaise
- 250 ml (1 cup) olive oil
- 2 tbsp. finely chopped dill
- 2 tbsp. lemon juice
- 1 tsp. grated lemon zest
- 1 egg yolk
- Salt and freshly ground pepper
Method
- Make the mayonnaise in a bowl by whisking the olive oil very gradually into the egg yolk until the desired consistency is obtained; you could also use a blender; add the lemon juice to whiten the mayonnaise then blend in the dill and season to taste; refrigerate;
- in a saucepan, bring the water to a boil; add the fish fillets, ensuring they are covered with water;
- cook for 5 minutes; drain; serve warm or cold with the mayonnaise.
