Pop Chicken Salad Recipe

Ingredients
For 4 servings
- 2 chicken breasts
- 1 head of curly leaf lettuce
- 70 g (3 oz.) walnuts
- 1 apple
- 10 radishes
- 8 nasturtium flowers (optional)
- Juice of half a lemon
- Salt, pepper, 5 peppercorn blend
Dressing
- 2 tbsp. sunflower oil
- 2 tbsp. walnut oil
- 2 tbsp. olive oil
- 1 tbsp. wine vinegar
- 1 tbsp. sherry vinegar
- Salt and pepper
Method
- Slice the chicken breasts into thin strips and steam for 20 minutes.
- Season with salt and pepper.
- Wash and dice the apple. Toss with lemon juice to prevent from browning.
- Coarsely chop the walnuts and slice the radishes.
- Wash and dry the lettuce.
- For the dressing, emulsify the oils and vinegars. Season with salt and pepper.
- Pour the dressing over the lettuce; add the radish, apple and walnuts. Toss well. Place into salad bowls.
- Place the cooled chicken slices on the salad and garnish with nasturtium flowers.
