Grilled Pork Chops with Caramelized Grapefruit

Chef's Note

The sweet mild taste of California grapefruit wonderfully enhances the flavors of the pork.

For 4 servings

- 4 pork chops
- 1 Tbsp. sunflower oil

- 2 large pink grapefruits
- 1 lemon
- 80 ml (1/3 cup) red wine
- 150 g (3/4 cup) brown sugar

Sweet Potatoes
- 1 kg (2 1/4 lb.) sweet potatoes
- 1 bunch fresh thyme
- salt
  1. Cook the cubed sweet potatoes in boiling salted water; add the thyme and cook 20 minutes.
  2. Peel the grapefruit, removing all the white pith, and separate the sections.
  3. Melt the sugar over very low heat, stirring often, until caramelized.
  4. Add the wine, grapefruit sections and lemon juice and simmer for 2 minutes uncovered. The fruit should darken lightly and the syrup thicken.
  5. Brown the pork chops in a little oil for 5-6 minutes on each side.

Serve the pork chops with the caramelized grapefruit and the mashed sweet potato.
