Potato salad - south-Africa style Recipe

Ingredients
- ^For 4 servings
- 6 potatoes with skin
- 150 ml sweetened evaporated milk
- 185 ml mayonnaise
- 5 ml / 1 Tsp. french Dijon mustard
- salt and pepper
- 15 ml / 1 Tbsp. fresh parsley
- , fnely chopped
Method
- Cook the potatoes in boiling water with a pinch of salt.
- Drain. Peel them while warm, and cut them into slices or dices.
- In a large bowl, combine the condensed milk, mustard and mayonnaise.
- Add the potatoes when they are still warm. Mix.
- Season with salt and pepper. Sprinkle parsley over the top.
- Chill before serving.
