Chef's Note
For this recipe the potatoes are sliced to accompany chicken breast stuffed with goat's cheese. However, you could use this same mixture to stuff baked potatoes as a side dish for grilled meats.

- 2 Potatoes, cooked and peeled
- 3 tbsp. oil
- Salt and freshly ground pepper
- 1 small tomato, diced
- 2 tbsp. chopped French shallot
- 1 tbsp. capers
- 4 slices of white Cheddar
Method
- Cut the potatoes into 1 cm slices (just under ½"). Brush with olive oil.
- Season with salt and pepper and roast on one side only.
- At the end of the cooking time, sauté the diced tomato, shallot and capers for a few seconds.
- Spread this mixture over the potato slices. Top with the cheddar slices.
- Place in a 150° C (300° F) oven until the cheese is melted. Serve immediately.
