Potatoes with Cheddar

Chef's Note
For this recipe the potatoes are sliced to accompany chicken breast stuffed with goat's cheese. However, you could use this same mixture to stuff baked potatoes as a side dish for grilled meats.
- 2 Potatoes, cooked and peeled
- 3 tbsp. oil
- Salt and freshly ground pepper
- 1 small tomato, diced
- 2 tbsp. chopped French shallot
- 1 tbsp. capers
- 4 slices of white Cheddar
  1. Cut the potatoes into 1 cm slices (just under ½"). Brush with olive oil.
  2. Season with salt and pepper and roast on one side only.
  3. At the end of the cooking time, sauté the diced tomato, shallot and capers for a few seconds.
  4. Spread this mixture over the potato slices. Top with the cheddar slices.
  5. Place in a 150° C (300° F) oven until the cheese is melted. Serve immediately.
