Raspberry Crème Brûlée

For 4 servings

- 4 egg yolks
- 300 g (1 1/2 cups) finely granulated sugar
- 1 packet of vanilla sugar or a few drops of pure vanilla extract
- 400 ml (generous 1 1/2 cups) cream
- 30 g (1/4 cup) flour
- 1/2 small basket of raspberries
  1. Beat the egg yolks with the sugar and vanilla sugar until pale and light;
  2. gradually blend in the flour and cream; thicken by cooking over simmering water in a double boiler, without boiling;
  3. pour the mixture into a baking dish or individual ramekins; chill. 

How to caramelize the crème brûlée

  1. Sprinkle each ramekin with a spoonful of sugar;
  2. Use a “caramelizing iron” or place the ramekins on the highest oven rack under the broiler and caramelize the sugar at high heat.
