Chef's Note

 A specialty of sunny Ticino 

- 1 large onion, minced
- 2 cloves of garlic, chopped
- 300 g (10 oz.) Rice
- 500 g (18 oz.) peeled diced tomatoes
- 600 ml (2 1/2 cups) hot stock
- 3 tbsp. oil
- 2 tbsp. tomato purée
- 50 g (3 tbsp.) butter
- 100 g (3 1/2 oz.) Sbrinz cheese
  1. heat the oil in a large saucepan; sauté the onion, rice and garlic for a few minutes;
  2. add the tomatoes and tomato puree;
  3. pour in the broth; bring to a boil; cover; reduce the heat to low and cook until the rice is done;
  4. remove the lid; stir in the butter and cheese; serve hot.
