Roasted Cod Recipe

Chef's Note

This recipe from Flanders is simple and quick to prepare... you don't need to be a chef to tackle it!

Serve the cod with boiled or steamed potatoes and braised fennel hearts.

For 4 servings
- 900 g (2 lb.) fresh cod (one thick slice)
- 2 onions, cut into rings
- 2 lemons, cut into rounds
- 250 ml (1 cup) white bread crumbs
- White vinegar or white wine
- 1/2 bunch parsley
- Salt and pepper
- Butter
  1. brush the cod with butter; roll in bread crumbs and place into a Dutch oven or cocotte;
  2. preheat the oven to moderate;
  3. cover the cod with the sliced onions and lemons; sprinkle with chopped parsley;
  4. season with salt and pepper;
  5. pour in the white vinegar, or white wine with a little vinegar, to cover the bottom of the pot by 5 mm (1/4");
  6. place in the oven for 30 minutes and serve in the cooking dish.
