Royal Icing Recipe

Chef's Note
This is the quintessential decorating icing. Using a piping bag with a small tip, you can create elaborate designs, adorn a wedding cake or write a name on a birthday cake.
Because of its consistency, you can even work on the sides of cakes without seeing your decorations run down to the bottom.
Ingredients
- 1 egg white
- 150 g (5 oz.) icing sugar (about 1 1/4 cup)
- a drizzle of lemon juice
Method
- Place the egg white in a bowl; add the lemon juice.
- Add half the icing sugar; whisk together, then incorporate the remaining icing sugar. Check the consistency and add more icing sugar as needed because the texture should not be too thin.
To check the consistency, place a drop on a cube of sugar (or a piece of dry sponge cake) and place another sugar cube on top. The two pieces should "weld" together almost instantly.
