Salmon Skewers with "Dog Sauce" Recipe

Ingredients
For 4 servings
- 1 kg (2 1/4 lb.) Norwegian salmon fillet
- 50 ml (3 Tbsp.) olive oil
- 1 lime
- 8 shallots
- 2 cloves of garlic
- 4 tomatoes
- 1 bunch of cilantro
- 6 Tbsp. olive oil
- Cayenne pepper
- salt
Method
- Cut the salmon into 3 cm (1 1/4") cubes.
- Pour the olive oil into a dish with half the finely chopped cilantro and the juice of the lime. Marinate the salmon cubes in the mixture for 20 minutes to "cook" it and flavor it.
- Meanwhile, prepare the "dog sauce" (a delicious French Caribbean sauce, perfect for grilled foods).
- Chop the remaining cilantro.
- Peel and chop the shallots and garlic. Make an X-shaped incision in the base of the tomatoes. Blanch them for 15 minutes so they will peel easily. Peel, seed and dice the tomatoes.
- Combine the tomato, cilantro, shallots and garlic in a bowl with the olive oil. Season with salt and a good pinch of cayenne to taste.
- Drain the salmon cubes and thread them onto wooden skewers that have been soaked in water so they will not burn during cooking.
- Grill the skewers for 3 minutes on a barbecue or under the broiler, turning them halfway so that the interior remains moist.
- Serve the skewers with the "dog sauce."
