Salmon Lollipops with Pickled Ginger and Cucumber Recipe

Ingredients
For 4 servings
- 300 g (10 oz.) fresh salmon loin
- 16 small wooden picks
- 1 cucumber
- a small jar of pickled (sushi) ginger
- 1/2 tsp. grated ginger (optional)
- olive oil
- black pepper
Method
- Cut the salmon into large equal cubes. Sprinkle with olive oil.
- Give a few grindings of fresh pepper to all sides; sprinkle with grated ginger.
- Peel the cucumber; cut into thin strips on a mandolin.
- Place a little marinated ginger on a slice of cucumber and roll up.
- Place a cucumber/ginger roll on each salmon cube and fasten with a toothpick.
- Serve as is, or with soy sauce.
