Salmon Lollipops with Pickled Ginger and Cucumber

For 4 servings

- 300 g (10 oz.) fresh salmon loin
- 16 small wooden picks
- a small jar of pickled (sushi) ginger
- 1/2 tsp. grated ginger (optional)
- olive oil
- black pepper
  1. Cut the salmon into large equal cubes. Sprinkle with olive oil.
  2. Give a few grindings of fresh pepper to all sides; sprinkle with grated ginger.
  3. Peel the cucumber; cut into thin strips on a mandolin.
  4. Place a little marinated ginger on a slice of cucumber and roll up.
  5. Place a cucumber/ginger roll on each salmon cube and fasten with a toothpick.
  6. Serve as is, or with soy sauce.
