Sautéed Lamb's Lettuce with Roasted Scallops and Raw Mountain Ham Recipe

Chef's Note

Lamb's lettuce is rich in omega-3 fatty acids. A 100 g portion provides 12% of the recommended daily intake.

This is an easy, delicious and healthful recipe.  

For 4 servings

- 150 g (5 oz.) mache (Lamb's Lettuce)
- 1 tbsp. olive oil
- 4 thin slices of raw mountain ham
- 4 thin slices of Parmesan
  1. Sauté the lamb's lettuce (mâche) in olive oil for 20 seconds. 
  2. Season the scallops with salt and pepper; pan roast them in 1 tbsp. olive oil. 
  3. Place the scallops on the lamb's lettuce on 4 plates. 
  4. Place a very thin, almost transparent, slice of ham on top, along with a Parmesan shaving.
