Sfouf - Lebanese Semolina Cake

Chef's Note

This traditional Lebanese sweet is served with milk or tea.

- 750 ml (3 cups) Semolina
- 560 ml (2 1/4 cups) sugar
- 500 ml (2 cups) milk
- 250 ml (1 cup) flour
- 250 ml (1 cup) vegetable oil
- 125 ml (1/2 cup) pine nuts
- 60 ml (1/4 cup) tahini (sesame paste)
- 1 tbsp. baking powder
- 2 tbsp. turmeric
  1. Combine the semolina, flour, turmeric and baking powder.
  2. Dissolve the sugar in the milk. Add the milk and sugar, along with the vegetable oil, to the dry ingredients.
  3. Spread the tahini over the bottom and sides of a 40 cm (9 x 13") pyrex or aluminum cake pan.
  4. Pour the batter slowly into the pan. Sprinkle the pine nuts on top.
  5. Place into a preheated 180° C (350° F) oven and bake for 30 minutes.
  6. Remove from the oven and let cool. Cut into squares and serve.
