Serve as a first course with thin baguette slices.
Ingredients for 4 servings
- 400 g (14 oz.) Smoked salmon
- 25 g (1 oz.) Green peppercorns
- 1 shallot
- 1 lime
- 25 g (5 tsp.) olive oil
- Young salad greens for garnish
  1. Purée the green peppercorns, shallot, oil and lime juice in a food processor; 
  2. refrigerate until serving time; 
  3. arrange the smoked salmon slices in a wreath in the centre of the plate; drizzle some sauce around the perimeter; serve.
