Sole Fillets with Orange Recipe

Ingredients
Ingredients for 4 servings
- 4 Sole or 8 fillets
- Juice of 5 Oranges
- 6 tbsp. fish stock
- 4 tbsp. crème fraîche
- Salt and freshly ground pepper
- 50 g (3 tbsp.) butter + 1 tbsp.
- Dill sprigs
Method
  1. Pour the orange juice and fish stock into a saucepan and reduce by three-quarters;
  2. add the cream and cook for 3 minutes; 
  3. whisk 50 g (3 tbsp.) butter into the sauce to emulsify; season with salt and pepper; strain;
  4. cook the sole fillets in a little butter in a skillet, turning once. 
Presentation
  1. place two fillets on each plate; top with the sauce;
  2. garnish with orange zest and segments and a sprig of dill.
