Turnip and Bacon Soup, a recipe from Gourmetpedia Recipe

Ingredients
For 6 servings
- 600 g (1 lb. 5 oz.) turnips
- 200 g (7 oz.) potato
- 1 onion, finely chopped
- 1 knob of butter
- 1 liter (4 cups) chicken stock
- 150 ml (2/3 cup) milk
- 100 ml (6 tbsp.) thick crème fraîche
- salt and pepper
Garnish
- 4 slices of smoked bacon
- country-style croutons
Method
- Peel and chop the turnips and potato.
- Sweat the onion in the butter until translucent.
- Add the turnip and potato, then pour in the stock.
- Cook, covered, over low heat for 30-35 minutes, until the vegetables are tender.
- Purée the soup; add the milk and cream; season and keep hot.
Finishing and serving
- Fry the 4 slices of bacon in a skillet until crispy.
- Serve the soup in small bowls or wide-rimmed soup plates; garnish with a slice of bacon and the croutons.
