Spaghetti alla carbonara

- 400 g (14 oz.) spaghetti)
- 100 g (3 1/2 oz.) unsmoked ham, cut into small pieces
- 3 beaten eggs
- 50 g (2 oz.) grated Pecorino
- 50 g (2 oz.) grated Parmesan
- 2 tbsp. oil
- 1 clove of garlic, minced
- Salt and black pepper
  1. Cook the spaghetti in boiling water with a pinch of salt; don’t overcook; drain;
  2. in a skillet, sauté the garlic in the hot oil; sauté the ham; remove the garlic once it begins to brown;
  3. add the spaghetti to the ham;
  4. in a bowl beat together half of both cheeses with the eggs; mix into the spaghetti; sprinkle with the remaining cheese; serve very hot.
