Chef's Note
Filipinos usually press the cooked onion and garlic through a sieve to make a sort of purée for the sauce, but you could also put everything into a blender.
Serve with white rice to which you’ve added some chopped green onion or shallot.
For a more exotic flavor, add some small pieces of fruit.
Ingredients
Ingredients for 4 servings
- 4 x 125 g (4 oz.) pieces of Beef
- 3 onions, thinly sliced
- 2 cloves of garlic, minced
- 4 tbsp. light soy sauce
- 2 tbsp. lime or lemon juice
- 2 tbsp. sugar
- 1/2 tbsp. oil
- Salt and freshly ground pepper
Method
- Rub the steaks with salt and pepper;
- in a small bowl, dissolve the sugar in the lemon juice and soy sauce;
- marinate the beef in this marinade for one hour, turning every 15 minutes; remove from the marinade and place on paper towels;
- pour the marinade into a saucepan; add the onions and garlic; bring to a boil; add 5 tbsp. boiling water; reduce the heat to minimum and simmer for 10 minutes; remove from the heat and press through a sieve; return to the saucepan and keep warm;
- brush the steaks with oil; grill on the barbecue or in the oven on high heat for 3-4 minutes on each side, depending on the thickness;
serve with the sauce.
