Steamed Asparagus with Citrus Vinaigrette Recipe

Ingredients
For 4 servings
- 1 kg / 2 pounds white Asparagus
- 1 orange
- 1 lime
- 1 grapefruit
- 1 Tbsp. honey
- 4 Tbsp. wine vinegar
- 50 ml / 1/5 cup sunflower oil
Method
- Peel the orange and lemon; remove the segments.
- Squeeze the juice from the grapefruit.
- In a saucepan, boil the honey with the grapefruit juice for 3 minutes; add the vinegar.
- Remove the saucepan from the heat and briskly whisk in the oil. Season the vinaigrette.
- Peel the asparagus; steam for 10 minutes.
- Place the citrus segments in the vinaigrette; let everything come to a lukewarm temperature.
- Serve the warm asparagus with the vinaigrette.
