Steamed Asparagus with Citrus Vinaigrette

For 4 servings

- 1 kg / 2 pounds white Asparagus
- 1 orange
- 1 lime
- 1 Tbsp. honey
- 4 Tbsp. wine vinegar
- 50 ml / 1/5 cup sunflower oil
  1. Peel the orange and lemon; remove the segments. 
  2. Squeeze the juice from the grapefruit.
  3. In a saucepan, boil the honey with the grapefruit juice for 3 minutes; add the vinegar.
  4. Remove the saucepan from the heat and briskly whisk in the oil. Season the vinaigrette.
  5. Peel the asparagus; steam for 10 minutes.
  6. Place the citrus segments in the vinaigrette; let everything come to a lukewarm temperature.
  7. Serve the warm asparagus with the vinaigrette.
