Chef's Note
The holidays bring back memories of warm gatherings and delicious food. A Potted Christmas Stilton is an easy-to-prepare and classic way to celebrate the good tidings of the year.
The Stilton comes often in an individual blue ceramic crock, which can be reused for many purposes... like a dip... far after the delectable cheese is gone.
Ingredients
For 4-6 servings
- 225g / 8oz Stilton cheese
- 75g / 3oz butter
- 7.5ml / 2tsp Port wine
- a pinch of ground mace
- a little melted butter to run over the top
Method
- Mash the Stilton with a fork.
 - Beat the butter to a soft cream, then beat in the Stilton, mace and Port
 - Pack the mixture into an attractive jar or serving dish, smooth over the surface and run a little melted butter over the top as seal.
 - Keep refrigerated until required. Serve as a dip with fresh bread or crackers.
