Strawberry Cappuccino with March Beer Recipe

Ingredients
Ingredients for 4 servings
- 500 g (18 oz.) strawberries
- 2 tbsp. brown crystallized sugar
- 1 tbsp. March Beer or other light beer
- 1 tbsp. olive oil
- 3 tbsp. flaked almonds
- Freshly ground pepper
- Cocoa powder
For the whipped cream
- 250 ml (1 cup) chilled whipping cream
- 1 tsp. icing sugar
Method
- Quickly rinse the strawberries under running water. Dry them gently and hull them.
- Purée the strawberries in a blender, gradually adding the brown sugar, oil and beer.
- Season with pepper and set aside in the refrigerator.
- Put the cream and icing sugar into a chilled bowl. Beat until the cream holds soft peaks. Set aside in the refrigerator.
- In a non-stick pan, lightly toast the flaked almonds.
- Just before serving, divide the strawberry emulsion among glasses and top with whipped cream. Sprinkle with cocoa powder and almonds and serve immediately with a cold March beer.
