Surimi and Shrimp Bites with Yogurt, Lemon and Garlic Recipe

Ingredients
- 1 package surimi (crab-flavored pollock)
- 8-10 frozen shrimps
- 1 Tbsp. mayonnaise
- 1 Tbsp. low-fat Greek yogurt
- 2 Tbsp. ReaLemon+garlic (1)
- Salt and pepper
Blinis
- 150 g Greek yogurt
- 1 egg
- 3 Tbsp. warm water
- 100 g buckwheat flour or white flour
- 1 pinch of salt
- 2 Tbsp. baking powder
- A drizzle of vegetable oil
Method
- In a bowl, beat together the Greek yogurt, egg and warm water.
- Add the flour and baking powder with a pinch of salt. Let rest for 30 minutes at room temperature.
- Bring the water to a boil in a small saucepan. Add the shrimp and cook briefly, just until they change color. Drain and refresh in cold water immediately. Peel and devein if necessary.
- Meanwhile, chop the surimi coarsely in a food processor.
- Chop the shrimp with a knife.
- Transfer both to a bowl and add the mayonnaise, yogurt, ReaLemon, salt and pepper. Combine well. Taste and correct the seasoning.
- Cover with plastic wrap and refrigerate for 1 hour.
- Meanwhile, heat a small amount of oil in a skillet and ladle out small circles of batter to make 6-7 cm blini. Cook for 2-3 minutes on each side.
Presentation
- Place a good spoonful of the surimi-shrimp mixture on each blini.
- Garnish with a little sprig of herb as desired.
