Surimi and Shrimp Bites with Yogurt, Lemon and Garlic

Ingredients
- 1 package surimi (crab-flavored pollock)
- 8-10 frozen shrimps
- 1 Tbsp. mayonnaise
- 1 Tbsp. low-fat Greek yogurt
- 2 Tbsp. ReaLemon+garlic (1)
- Salt and pepper

Blinis
- 150 g Greek yogurt
- 1 egg
- 3 Tbsp. warm water
- 100 g buckwheat flour or white flour
- 1 pinch of salt
- 2 Tbsp. baking powder
- A drizzle of vegetable oil
Method
  1. In a bowl, beat together the Greek yogurt, egg and warm water.
  2. Add the flour and baking powder with a pinch of salt. Let rest for 30 minutes at room temperature.
  3. Bring the water to a boil in a small saucepan. Add the shrimp and cook briefly, just until they change color. Drain and refresh in cold water immediately. Peel and devein if necessary.
  4. Meanwhile, chop the surimi coarsely in a food processor.
  5. Chop the shrimp with a knife.
  6. Transfer both to a bowl and add the mayonnaise, yogurt, ReaLemon, salt and pepper. Combine well. Taste and correct the seasoning.
  7. Cover with plastic wrap and refrigerate for 1 hour.
  8. Meanwhile, heat a small amount of oil in a skillet and ladle out small circles of batter to make 6-7 cm blini. Cook for 2-3 minutes on each side.

Presentation

  1. Place a good spoonful of the surimi-shrimp mixture on each blini.
  2. Garnish with a little sprig of herb as desired.
