Sweet and Sour Leeks - Tiansuan jiucai

Ingredients for 4 servings
- 350 g (12 oz.) Leeks
- 4 tbsp. peanut oil
- 1 clove of garlic
- 1 small chili (optional)
- 2 tbsp. rice vinegar or white vinegar
- 1 tbsp. dark soy sauce
- 1 tbsp. sugar
- 1 tbsp. ginger syrup
- 4 tbsp. chicken stock
- 2 tbsp. cilantro or celery leaves
- Salt
  1. clean the leeks, removing the tough green parts; slice into rounds about the thickness of a finger;
  2. heat the oil in a wok; add the garlic and brown; remove it;
  3. add the chili and leeks; stir fry over high heat for 3 minutes;
  4. reduce the heat to medium; add all the other ingredients except the cilantro; cover and cook for 2 minutes for tender-crisp or 5 minutes for tender; stir occasionally during cooking;
  5. just before serving; sprinkle with cilantro or celery leaves.
