Sweet Potato and Red Bean Paste Balls

- 480 g (17 oz.) red bean paste
- 320 g (12 oz.) Sweet Potato
- 750 ml (3 cups) sticky rice flour
- 250 ml (1 cup) water
- 165 ml (3/4 cup) all-purpose flour
- 125 ml (1/2 cup) white sesame seeds
- 3 tbsp. sugar
  1. Soak the sesame seeds in boiling water for 30 minutes; drain;
  2. meanwhile, peel the sweet potatoes and cut into thick slices; steam until tender; purée without adding anything else;
  3. combine the two flours, the sweet potato purée, the sugar and 1 cup (250 ml) water to make a smooth dough;
  4. form the red bean paste into small balls; cover with the sweet potato dough; roll in sesame seeds;
  5. fry in hot oil until golden; drain and place on paper towel.
