Sea Bream and Citrus Tartare Recipe

Ingredients
For 10 servings
- 1.2 kg sea bream fillet
- 750 g cream cheese
- 3 pink grapefruits
- 30 g grated coconut , toasted
- 75 g olive oil
- 5 baby gem lettuces or small tender lettuce leaves
- Salt & pepper
- Sugar
Method
- Remove the supremes (skinless segments) from the grapefruit, reserving the excess juice.
- Thin the cream cheese with a little grapefruit juice. Season with salt, pepper and a touch of sugar.
- Cut the sea bream fillet into tartare; season with salt, pepper, olive oil and grapefruit juice.
- Slice the lettuce thinly.
- In a 6 cm circle, arrange the cream cheese, sea bream tartare, grapefruit segments and thinly sliced lettuce.
- Sprinkle with toasted coconut.
