Chef's Note

This rich and luxurious potato dish straight out of the French Alps makes an indulgent supper for two

- Potatoes, thinly sliced (350-400 g / 12-14 oz. per person)
- Onions, thinly sliced
- Bacon bits (lardons) (cut into small pieces)
- Some fat for frying
  1. Peel the potatoes; wash well and pat dry;
  2. slice each potato into thin slices; pat dry again;
  3. sauté the bacon pieces in the lard or oil;
  4. add the potatoes and onions and continue frying;
  5. add fresh herbs to taste; season with salt and pepper;
  6. cover with some nice slices of Reblochon cheese and place in the oven until the flavors have blended and the cheese is melted and browned.
