Chef's Note

Kaymak is cream obtained from buffalo milk. You can replace it with stiffly whipped cream.

- 500 g (18 oz.) dried Apricots
- 1 glass of water
- 1 glass of sugar
- 1 tbsp. lemon juice
- 1 glass of sweetened whipped cream or kaymak
  1. Wash the apricots; place in a saucepan;
  2. add the water, sugar and lemon juice and cook until the apricots are tender and the liquid is syrupy;
  3. drain the apricots;
  4. fill the apricots with kaymak or sweetened whipped cream and reserve in the refrigerator.
