Tomato Crumble

For 4 servings

- 500 g (18 oz.) diced Italian-style tomatoes
- 1 tbsp. thyme
- 2 tbsp. basil
- 1/2 tsp. garlic
- Olive oil
- Salt and pepper

- 80 g (3/4 cup) flour
- 50 g (2 oz.) Parmesan
- 4 tbsp. olive oil
- Salt and pepper

  1. Preheat the oven to 190°C (375° F).
  2. In a bowl, combine the diced tomatoes with the minced thyme, basil and garlic. Season with salt and pepper.
  3. In another bowl, combine the flour and Parmesan with the olive oil; rub together with your fingertips to obtain a sandy texture. Season with salt and pepper.
  4. Oil 4 ramekins; divide the seasoned tomatoes among them. 
  5. Cover with the crumble; bake for 20 minutes.
