Turkey with Cranberry-Maple Stuffing Recipe

Ingredients
Stuffing
- 450 g (1 lb.) ground turkey
- 375 ml (1 1/2 cups) fresh or thawed cranberries
- 375 ml (1 1/2 cups) grated potato
- 2 French shallots, chopped
- 3 cloves of garlic, chopped
- 2 tbsp. fresh herbs (rosemary, savory, thyme, sage, etc.) or 10 ml (2 tsp.) dried herbs
- 125 ml (1/2 cup) maple syrup
- salt and freshly ground pepper
Turkey
- 1 whole turkey, about 3.5 kg (8 lb.)
- 250 ml (1 cup) chicken broth
- 250 ml (1 cup) white wine
- 125 ml (1/2 cup) maple syrup
Method
- Preheat the oven to 160° C (325° F). Combine all the ingredients for the stuffing.
- Place the turkey in a roasting pan, breast up, and stuff the cavity.
- Tie the legs together with string.
- Combine the remaining ingredients and pour over the turkey.
- Cover and cook for about 2 hours 20 minutes, or 20 minutes per pound, until the meat comes away easily from the bone. Baste frequently.
- Remove the lid 30 minutes before the ending of the cooking time to brown the skin.
- Let rest 15 minutes before carving. Serve the turkey with the stuffing and pan juices.
