Newfoundland Turkey Dressing Recipe
Chef's Note
Savory is a unique tasting spice that comes from Mt. Scio Farms located in St. John’s, Newfoundland. It is said that the very mineral soil of Newfoundland makes for excellent savory. Savory tastes great in stuffing for chickens or turkeys, or it may be used to flavor soups and stews. At Bidgood’s they use savory to add flavor to fish cakes. Its aroma takes me back to my childhood.
You can also use summer savory; its flavor is milder than that of winter savory.
For Thanksgiving in Newfoundland, it's traditional to prepare turkey with this stuffing. It's served with carrots gratinéed with bread crumbs and brown sugar, cauliflower with cheese sauce and buttered, parsleyed boiled potatoes.
Ingredients
- 1 onion, minced
- 1 celery stalk, diced
- 1 tbsp. dried Mt. Scio Farms savory *
- 3 cup (750 ml) dried bread crumbs
- 3 bacon rashers, minced
- 2 tbsp. butter
- Salt, pepper
Method
- Saute the onions, celery and bacon in butter until soft but not colored.
- Combine thoroughly with the bread crumbs and savory and season with salt and black pepper.
- Stuff the turkey.
