Valais Apricots on a Bed of Chard Recipe

Ingredients
Ingredients for 8-10 servings
- 300 g (10 oz.) trimmed Swiss Chard
- 1 onion, finely chopped
- Butter
- 100 ml (3 1/2 oz.) vegetable broth
- Salt and freshly ground pepper
- 8 ripe but firm Apricots
- 1 tbsp. lemon juice
- 50 g (2 oz.) Grisons dried beef, finely diced
- 200-250 g (7-8 oz.) Swiss Raclette cheese, sliced
Method
- Cut the chard into 1 cm (1/2") pieces. Sweat it with the onion in butter, add the broth and cook, covered, for about 10 minutes. Uncover and reduce the liquid until only 1 tbsp. remains. Season with salt and pepper and cool.
- Halve, pit and slice the apricots. Toss with the lemon juice.
- Divide the chard among individual raclette dishes. Add the apricots and dried meat, cover with raclette cheese and place in the oven until the cheese has melted.
