Raclette - Herbed Tomato Slices Recipe

For 8 servings

- 3 tbsp. finely chopped flat leaf parsley
- 3 tbsp. finely chopped basil
- 1 shallot, finely chopped
- 1/3 tsp. salt, a little freshly ground pepper
- 4 small ripe tomatoes
- 200-250 g (7-8 oz.) Swiss Raclette cheese, sliced
- A few basil leaves
  1. Combine the parsley, basil, shallot, salt and pepper.
  2. Hull the tomatoes with a paring knife and cut into 4 slices. Place 8 slices on the platter, sprinkle with the herb mixture and cover with the remaining slices.
  3. Divide the stuffed tomatoes among the raclette pans; cover with raclette cheese and let it melt. Garnish with basil.
