Chef's Note

This is an excellent cold soup, with a delicate and different flavour.

For 4 servings

- 4 apples, peeled and seeded
- 4 potatoes, peeled
- 3 leeks, white part only, washed well
- 2 celery stalks
- 1 litre (4 cups) light chicken broth
- 500 ml (2 cups) milk
- salt, pepper, chives or mint
  1. Place the apples, potatoes, celery and leeks into a pot with the chicken broth; simmer for 30 minutes;
  2. remove the pot from the heat and let cook for ten minutes;
  3. add the cold milk; liquefy the mixture in a blender;
  4. season to taste; add the snipped chives or mint; chill in the refrigerator;
  5. serve very cold; garnish with a few more chives or mint leaves.
