Warm Cucumber Sauce for fish Recipe

Method
- Make a light bechamel sauce;
- in a skillet, brown some almonds in a little butter; remove and set aside;
- in the same skillet, cook some diced cucumber, peeled and seeded, in a large knob of butter over medium heat until very soft;
- add a bunch of chopped fresh dill;
- add the diced cucumber and dill to the bechamel sauce; leave for five minutes to allow the flavours to blend;
- spoon over grilled, poached or baked fish; add the almonds and serve.
