Warm Cucumber Sauce for fish Recipe

Method
  1. Make a light bechamel sauce;
  2. in a skillet, brown some almonds in a little butter; remove and set aside;
  3. in the same skillet, cook some diced cucumber, peeled and seeded, in a large knob of butter over medium heat until very soft;
  4. add a bunch of chopped fresh dill;
  5. add the diced cucumber and dill to the bechamel sauce; leave for five minutes to allow the flavours to blend;
  6. spoon over grilled, poached or baked fish; add the almonds and serve.
