It could be said that Knödel are the foundation of German cooking. In this case, we are talking about a dumpling made of white bread and spices. They are served instead of potatoes as a side-dish with pork hocks and sausages.

Cook a single dumpling to check the texture. If it is too soft, add some bread crumbs to the dough.

- 200 g (7 oz.) white Bread
- 100 g (6 tbsp.) butter
- 250 ml (1 cup) scalded milk
- 2 eggs
- 1 onion, chopped
- 1 bunch of parsley, chopped
- Salt, white pepper, nutmeg
  1. Slice the bread; place in a bowl and pour the boiling milk over top;
  2. in a small saucepan; cook the onion gently in butter until it is translucent; remove from the heat; add the parsley;
  3. in a bowl, combine all the ingredients to form a smooth batter;
  4. shape into balls; poach in water or broth for about 20 minutes;
  5. drain and serve hot.
