White kidneys in Honey Sauce with Sweet Potato Chips Recipe

Ingredients
For 2 servings
- 4 white kidneys, prepared
- 2 tsp. mild chili powder
- 1/2 tsp. cinnamon
- 1 tsp. Cumin
- 1 tbsp. flower honey
- 150 g (5 oz.) butter
- 1 nice Sweet Potato
- Oil for frying
- Salt
Method
- Toss the white kidneys gently in salt without crushing them and rinse in fresh water.
- Rinse several times, then slice into strips and drain on paper towel.
- Meanwhile, peel the sweet potato and slice thinly – use a mandolin to save time.
- Heat the frying oil in a skillet and cook the sweet potato slices until crispy. Drain and place on paper towels. Salt and set aside.
- Melt the butter in a skillet and add the spices (paprika, cinnamon, cumin), stirring with a spatula to blend the ingredients well.
- Add the sliced white kidneys and cook for a few minutes before adding the honey. Cook over high heat for several minutes.
- Remove white kidneys and keep hot.
- Make the sauce: reduce the cooking juices to form a sweet, slightly-thickened sauce.
- Serve white kidneys with the sweet potato chips and spoon the sauce over top.
