Beneath its chlorophyll, these little leaves contain large amounts of an orange pigment called beta-carotene, a natural anti-oxidant that combats cell aging. Since they are water soluble, they can be easily lost. Therefore it is recommended that you don't soak or wash Lamb's Lettuce in large amounts of water, so as not to lose the vitamins.
