The Andalucia (Tomme de brebis, chorizo and onion compote sandwich) Recipe

Ingredients
Per serving
- 2 slices of tomme de brebis / or other sheep cheese
- 5 ml onion-jam or more to taste
- 4 slice of chorizo
- 1 red pepper
- 2 slices of country bread
- 3 curly lettuce leaves
- Espelette chili Pepper (optional)
Method
- Spread the first slice of bread with the onion compote.
- Place the Tomme de Brebis on top, then the chorizo, lettuce and finally the pickled pepper, cut into strips.
- Sprinkle everything lightly with Espelette chili.
- Top with the other slice of country bread.
