Artichoke Hearts with Foie Gras Recipe

Ingredients
Ingredients for 4 servings
- 16 Artichoke hearts
- 2 tbsp. Madeira
- 50 g (3 tbsp.) butter
- 16 small thin rounds of Foie gras or goose liver
- Salt and pepper
Method
- blanch the artichoke hearts in boiling lightly salted water for 8 minutes;
- melt the butter in a sauté pan; add the Madeira; add the artichoke hearts; season with salt and pepper; cover and simmer over low heat for 20 minutes;
- place 4 artichoke hearts on each plate; top each with a slice of foie gras;
- garnish with a slice of truffle (optional) and serve.
