Bachelor's Compote

- 200 g (1 cup) sugar
- 4 apples
- 3 pears
- 1 pineapple
- 1 banana
- 100 g (3 1/2 oz.) rum
- 200 g (3/4 cup) simple syrup at 60°
- Zest of 1 lemon
- 2 vanilla beans (split and scraped)
  1. Caramelize the sugar in a non-stick pan;
  2. add the apples, pears and pineapple that have been peeled and diced. Allow to brown slightly, cook for 5 minutes, then add the sliced banana.
  3. Deglaze with the rum, then add the syrup, lemon zest and vanilla beans.
  4. Cook for about 15 minutes. Place in jars and refrigerate.
