Bean Sprout Salad - Kong Namulh

Ingredients
- 120 g (4 oz.) Soy or Soya bean sprouts
- 1 tbsp. sugar
- 1 1/2 tbsp. herb vinegar
- 2 tbsp. light Chinese Soy Sauce or Soya Sauce
- 1 tbsp. red chili oil
Method
  1. Wash the bean sprouts; remove as many of the seed capsules as possible;
  2. place the bean sprouts in a saucepan and gently pour boiling water over them; drain; dry quickly in a well-ventilated place or on paper towels;
  3. combine the vinegar, oil, soy sauce and sugar; mix until the sugar is dissolved;
  4. pour over the bean sprouts; toss well and divide among individual bowls.
