Beef burger with blue cheese cream Recipe

Chef's Note
During grilling season, prepare the onions and sauce ahead of time in your kitchen, then the grill the burgers and buns on the barbecue.
For an added treat, replace the sautéed onions with fried onion rings.
Ingredients
For 2 servings
- 300 g ground beef
- 3 Tbsp. crushed walnuts
- 2 Tbsp. oil
- 1 onion - red or white to taste
- lettuce leaves – arugula or spinach
- salt and freshly ground pepper
Blue cheese cream
- 75 g roquefort or other blue cheese
- 75 ml cream
- Pepper
- 2 large hamburger buns
Method
- Peel and slice the onions into rings. Sauté in a spoonful of oil until lightly colored. Set aside.
- In a bowl, combine the ground beef and walnuts. Season with salt and pepper. Divide the mixture in half and form into two patties about 2 cm thick.
- Place the cubed blue cheese in a saucepan with the cream and pepper. Heat to a simmer, stirring until the cheese is melted and it starts to thicken.
- Cook the burgers in a skillet brushed with oil.
- Meanwhile, split the buns and toast in a dry skillet or under the broiler.
- Assemble the burgers in this order: lettuce, onion, burger, blue cheese sauce. Serve immediately.
