Chef's Note

Double-boiling technique
It is submerging a ceramic jar containing the ingredients into a pot of boiling water.

- 70 g beefshank
- 10 g Jinhua ham
- 10 g pork
- 10 g red date
- 5 g chinese yam
- 5 g ginger
- 5 g medlar
- 5 g spring onions
- 5 g salt
- water
  1. Wash and clean the beef and pork. Cut in cubes.
  2. Place the beef, pork, ham, red dates, yam, medlar, rice wine, ginger and spring onion into a ceramic double boiling jar.
  3. Add water till it covers the ingredients.
  4. Cover the jar and seal with cling wrap or aluminium foil. Place the jar in a large pot, half submerge jar in water.
  5. Bring the pot to a boil, lower the heat and cover the pot to simmer for 3 hours.
  6. Remove the jar from the pot and add salt before serving.
