Chef's Note
Bitter orange wine is a dessert wine that should be served chilled.
During the macerating time, it's best to place the container in a cellar or other cool place, away from sunlight and drafts.
Ingredients
- 5 liters (5 quarts) of good rosé wine (12%)
- 1 liter (1 quart) clear alcohol (40%)
- 1 kg (2 1/4 lb.) sugar
- Zest and juice of 7 unsprayed bitter Oranges
- 1 vanilla bean
Method
- put everything into a small barrel or crock;
- cover and let macerate for 40 days, stirring regularly;
- strain and bottle.
